Stuffed Pepper Soup
This winter has been busy for me, which is a good thing! I hate the winter and driving in the snow, shoveling, or just the many layers of clothing.. augh! Working from home means time to cook wholesome good food. When my husband returns home from working outside, that's the first thing he's looking for, what's hot cooking on the stove!
Even if I'm busy with my DIY's or crafting, or some boring household chores, there is always time to put a good soup on the table for dinner. If you have ever made stuffed peppers I think you will love this soup. Of course the middle with all the meat and rice is the best part don't you agree? My mom's recipe was always made that way but her sauce was just plain tomato juice in the can, I'm serious that was it! I think the rice in the peppers is what made it thicken up and oh so tasty. I always as a kid hated the limpy pepper part of the dish and it always got tossed aside so I could eat the best part.. :) I hope you like it as much as we do, hubby gobbled up two bowls tonight, so I guess that's a good sign!
