Orange Ricotta Pound Cake
This recipe seems to have become a Thanksgiving tradition since last year, when we fell in love with this moist and citrusy pound cake. It's decadent, and great for breakfast, or just that must needed coffee break midst all the hustle bustle of shopping and holiday cooking. This is the yummy bite of something I reach for to have with coffee when I've been on my feet all day, straight out, and I'm finally able to sit! Because it feels like a holiday cake, it's also delicious if you add cranberries or raspberries, (probably 1/4 cup) and chopped nuts to the batter if you like. (almonds would be my choice) I wrap these up in parchment paper once cooled overnight, and then a nice wrapping paper or brown paper with bakers twine or ribbon, and maybe a sprig of rosemary or boxwood I cut from the yard. I'll post another picture once I wrap them for gift giving. Bringing a sweet treat to a friend is a gift from your kitchen and always appreciated.
